About Beth

Hi! I am Beth and I am the Registered Dietitian for Chartwells Higher Education at UNC Charlotte. I am originally from Ohio and went to The Ohio State University (Go Bucks!), where I obtained my Bachelors of Science in Dietetics. Knowing that I wanted to work in a community based setting when I "grew up," I made the jump to the University of North Carolina at Chapel Hill, where I received my Masters of Public Health in Nutrition. In addition to being a nutrition dork, I am a foodie who loves to cook, garden, and be active as much as possible. Having grown up with all brothers, I developed a knack for sarcasm, which has manifested its way into my blogs.

About Keep it Fresh, Keep it Green

After years of having seen countless news articles and reports on some of the most ridiculous nutrition misinformation and having had numerous people ask me about these topics, I was getting annoyed. With the opportunity to educate and influence students, faculty, and staff at UNC Charlotte on the confusing and ever evolving world of nutrition, I started writing these blogs. Realizing that not everybody is as big of a dork as myself, I wanted to write my blogs in a way that would capture people's attention while being both entertaining and educational.  How does one do that? Sarcasm. Ok, so maybe its sarcasm, avoiding the use of big words that you can't pronounce, not overloading you with meaningless numbers, and breaking it down for you. I hope you enjoy my blogs!
